Jermiah Borrego
Jeremiah mastered the craft grinding in Brooklyn’s coffee scene, then flipped the script—curating and roasting every batch himself.
His mission? To drop bold flavors and real craftsmanship in every cup, making Olas the spot where coffee lovers come to vibe and connect.

The Olas Story
Our flagship store opened in 2022 at Lorimer and Powers in bustling Williamsburg. Olas—meaning “waves” in Spanish—captures the energy and connection of great coffee.
We serve three signature coffees, plus Jeremiah’s green coffee kombucha, alongside fresh Texas-style breakfast tacos and salted chocolate chip cookies baked daily.
More than coffee, it’s a place to enjoy flavor, community, and feeling at home.
